Whole Wheat Banana Muffins

This has become my favorite banana muffin recipe. I adapted it from a recipe for banana cake. While I’d like to tell myself it’s healthy because of the whole wheat flour, it still has butter and sugar. So we’ll call it “semi-healthy”. I used both my regular muffin pan and the silicone muffin pan.  On a side rant: My mom got me the silicone pan for Christmas and I LOVE it. I wish I had switched sooner. So far I’ve made muffins, cornbread and biscuits. They have come out perfect every time!

Whole Wheat Banana Muffins

2-3 ripe bananas, mashed

2 eggs, beaten

1/3 cup buttermilk

1 stick of butter

1 1/4 cup all-purpose flour

1 cup whole wheat flour

1 cup sugar

1/4 cup brown sugar

3 tbsp. applesauce

1 1/4 tsp. baking powder

1/2 tsp. salt

1 tsp. cinnamon

2 tsp. vanilla

Top with crushed walnuts (optional)

Mix and bake @ 375 for 30 minutes or until tops are golden brown and your kitchen smells delicious!

The one on the left is from the metal muffin pan and the one on the right is from the silicone! Why on earth have I been using a crappy metal pan all this time!

Wholesome Baby Food

I went to Whole Foods yesterday and stocked up on some organic fruits and veggies to start making food for Roman. He hasn’t been very  interested in store bought baby food. However, he loves when I mush up bananas. I’m hoping that means he’ll like “real” food better. I’ve been looking at recipes on Wholesome Baby Food and decided to start with something simple.

Last night, I tried making some carrots. I steamed them until they were very soft, about 20 minutes.

I put some on his tray. He would pick them up, but hasn’t mastered the “pinch” yet so he kind of had a rough time getting them into his mouth since they were so small.

He let me feed some to him and he liked them! He ate quite a few. I must admit they were delicious!

I also put some in the baby safe feeder, but he wasn’t as interested in it. I think I’ll stick to putting frozen food in it.

He also LOVES teething biscuits.

I’m planning to make him peaches, pears and apples. Anyone have baby food making tips?

Also, check out awesome this feature about The Knit Owl here! Thanks, Kristen!!

My other babies! They’ve been so great with Roman or maybe tolerant is a better word? Roman lights up whenever he sees them and squeals each time he puts his hand down to pet them. I keep asking him, “why do they always run away when you come over to pet them?!”

And the winner is…

According to random.org, comment #10 is the winner of the headband giveaway!

Congrats Jen! Thanks everyone for your comments. I’m excited to be blogging again. I will be doing some more giveaways soon!

Hello There!

Welcome to the new Knit Owl blog!

Life got busy and I fell out of blogging. One of my goals for the year was to get it going again.

There’s been a lot happening around here.

I had a baby, Roman Brant, last July!

He’s 7 months now!

I’ve still been knitting, crocheting, baking and sewing. Along with running The Knit Owl Etsy shop, filling custom orders and selling in local stores.

Speaking of, I’d like to host a giveaway in celebration of the new blog. Please leave a comment between now and Monday, February 28! One lucky winner will receive 3 Grecian Style Headbands in the colors of their choice!

Thanks for stopping by. I hope you’ll come back soon! I have lots of fun things planned!
